Pig Picking Cake

The BF made this, the recipe which comes from one of his mom's cookbooks (Murdoch something or another).  It was the first time The BF tried making a cake, and it turned out delicious!

Cake:

Ingredients:

  • 1 box Duncan Hines yellow cake mix
  • 1 stick butter or margarine
  • 1/4 cup vegetable oil
  • 4 eggs
  • 1 11 oz. can mandarin oranges

Mix ingredients in order listed.  Divide mixing into 3 equal parts in 3 layer cake pans and bake at 350 degres for 25 to 30 minutes.

Icing:

Ingredients:

  • 1 large can crushed pineapple
  • 1 dry pkg. vanilla instant pudding
  • 1 large pkg. cool whip or topping

Mix in order listed and use as filling and icing for 3 layers.

Cilantro and Garlic Stuffed Chicken Breast

I got this off the Foodista website, and had to change it up a little, but it still turned out delicious!

Ingredients

  • 4 chicken breasts
  • 6 gloves garlic
  • 1 cup fresh cilantro, finely chopped
  • olive oil, salt, fresh cracked black pepper, lemon juice and zest

  Directions

  • Make a slice lengthwise through the middle of each breast, but do not cut in half
  • Crush garlic in bowl to make a paste
  • Mix in 2 pinches of salt
  • Spread garlic paste on inside of each breast and pack in chopped cilantro
  • Season each side with salt and pepper
  • In skillet, heat olive oil and cook chicken on each side until golden brown and until juices run clear
  • Plate and squeeze fresh lemon juice over chicken and top with a bit of lemon zest

Dark Chocolate Chip Pecan Cookies

This is a very simple recipe that's basically fool proof.  Heck, if I can make it, anyone can!

Ingredients

  • 2 1/4 c all purpose flour
  • 1 ts baking soda
  • 1/2 ts salt
  • 1 c butter, softened
  • 3/4 c granulated sugar
  • 3/4 packed light brown sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 2 cups dark chocolate chip
  • 1 cup crushed pecans

Baking Directions 

  • Heat oven at 375 F
  • Stir together flour, baking soda, salt.  
  • In large bowl beat butter, granulated sugar, brown sugar,  and vanilla extract until creamy.  Add eggs;beat well
  • Gradually add flour mixture, continuing to mix well
  • Stir in chocolate chips and nuts
  • Drop by rounded teaspoons onto ungreased cookie sheet
  • Bake 8-10 minutes
